Peppermint Hot Chocolate

I can’t believe Christmas is in only 2 days! It truly is one of the most wonderful times of the year.  A favorite Christmas tradition in my house is curling up on the couch next to a warm, crackling fire and drinking hot chocolate while watching Christmas movies!  Here is my “healthified” version of hot chocolate that is vegan as well as gluten and soy-free!


Here I am holding this hot chocolate in a mug a friend gave to me for Christmas –Do you notice the Health and High Heels ornament behind it?  🙂

What you’ll need for 1 serving…

  • 1 cup unsweetened almond milk
  • 1/2 tsp peppermint extract
  • 2 tbsp cocoa powder (use cacao if you like it to be more bitter)
  • 1/4 cup dark chocolate chips (I use Enjoy Life 69% cacao chocolate chips, but use higher cacao percentages if you are okay with more bitter hot cocoa)

Pour almond milk in a pan and heat on medium heat on a stove.  Add the cocoa powder and chocolate chips.  Stir so it doesn’t burn.  Once everything is thoroughly mixed and the hot chocolate is a preferable temperature, pour into a mug and drink!  Or, if you want, let your drink sit for a couple minutes because it will thicken and become even more rich.  If you let it thicken a lot, you can also pour it over vanilla ice cream for a peppermint fudge sundae!  ❤
